Their ethos is of cooking with open flame, butcher from “nose to tail” and utilising the best ingredients from their estate, and Scotland’s abundant land and sea larder.
The Sous Chef will be responsible for the day-to-day running of their state of the art kitchen. A highly skilled Chef looking to move up, who cares passionately about food, you will also be willing to learn and adapt to different ways of cooking. We are not looking for a Sous Chef who is pure fine dining. The food offering is rustic with excellent locally sourced ingredients... simple and tasty... fresh pasta, fish, meat and seafood etc.
