What is a chef de partie?

A Chef de Partie prepares much of the food that comes out of a restaurant’s kitchen.  They work under the supervision of a Sous Chef or Head Chef and are assigned a particular place on the line, such as the vegetable prep area, stove or grill.  As food orders come into the kitchen, Chef de Partie’s working at a particular kitchen station start preparing the portions of the order that their particular kitchen area is responsible for.

In addition to preparing meals, a Chef de Partie usually has several duties that revolve around keeping the kitchen operational and clean.

What sort of hours will I work?

You will most likely be required to work split shifts of around 40 hours a week.

What skills do I need?

Chefs de Partie need a range of skills to perform their duties effectively.  These skills and qualifications include:

  • Excellent verbal and written communication skills
  • Organisational skills
  • In-depth knowledge of the standards of baking, cooking and grilling techniques
  • Ability to work under pressure and in a fast-paced environment
  • Ability to quickly learn new recipes and new cooking procedures
  • Time management skills
  • Ability to work efficiently and co-operatively in a team environment
  • Ability to solve problems quickly.

What qualifications do I need?

There are no formal education requirements for a Chef de Partie, but many employers require candidates to complete on-the-job training.  Entry level for on-the-job training starts with instruction on food preparation, safety and sanitation, they then begin working at one kitchen station and having mastered that they move onto other kitchen areas and learn the entire kitchen.

At upscaled restaurants a Chef de Partie might be required to:-

    • Complete some training in culinary arts
    • Obtain a Chartered Institute of Environmental Health (CIEH) Foundation Certificate in Food Safety (Level 2)
    • CIEH Intermediate Food Safety (Level 3)

What sort of salary can I expect?

Depending on your experience and location you can expect from £25,000 – £28,000 per annum.
